The Sherry Flip is the light, wine-based variation of the classic flip. Sherry, whole egg and a little sugar make a velvety, nutty-sweet drink with a fine foam crown. Dusted with nutmeg, it is an elegant aperitif or digestif.
Instructions
- Add sherry, whole egg and sugar syrup to the shaker.
- First shake hard without ice (dry shake).
- Add ice cubes and shake again for about 15 seconds.
- Strain into a pre-chilled coupe.
- Dust with freshly grated nutmeg and serve.
Garnish: Freshly grated nutmeg
Pro tip: A nutty Oloroso makes the flip aromatic, a cream sherry a little sweeter - both pair wonderfully with the nutmeg.
Frequently asked questions
Which sherry works best?
A full-bodied Oloroso or a sweet cream sherry gives the flip the necessary depth and nutty sweetness.
Is the Sherry Flip lighter than a Brandy Flip?
Yes, since sherry has less alcohol than cognac, the Sherry Flip turns out milder and more digestible overall.
Can I make the flip without egg?
Without egg the flip loses its characteristic creaminess - vegan aquafaba foam is a possible alternative.
