The Sherry Flip is the light, wine-based variation of the classic flip. Sherry, whole egg and a little sugar make a velvety, nutty-sweet drink with a fine foam crown. Dusted with nutmeg, it is an elegant aperitif or digestif.

Instructions

  1. Add sherry, whole egg and sugar syrup to the shaker.
  2. First shake hard without ice (dry shake).
  3. Add ice cubes and shake again for about 15 seconds.
  4. Strain into a pre-chilled coupe.
  5. Dust with freshly grated nutmeg and serve.
