The Porto Flip is a creamy classic from the flip family and is officially on the IBA list. Port wine and cognac form the wine-like, spicy base, while the egg yolk provides a velvety texture. Dusted with nutmeg, it is an elegant digestif for the evening.

Instructions

  1. Add port wine, cognac, egg yolk and sugar syrup to the shaker.
  2. First shake vigorously without ice (dry shake).
  3. Add ice cubes and shake again for about 15 seconds.
  4. Strain into a pre-chilled coupe.
  5. Dust with freshly grated nutmeg and serve.

Garnish: Freshly grated nutmeg

Pro tip: First shake the flip briefly without ice (dry shake) so the egg yolk emulsifies nicely and creamily, then again with ice.

Frequently asked questions

What is a flip?

A flip is a classic drink of a spirit or fortified wine, a whole egg or egg yolk and sugar - creamy and filling.

Is the raw egg yolk a concern?

Always use very fresh eggs and keep them chilled, then the risk is low. Alternatively, pasteurized egg yolk works.

Which port wine is suitable?

A full-bodied ruby port or a tawny gives the flip its typical sweet, wine-like depth.
