The Port Flip is a velvety dessert cocktail from the 19th century in which port wine is foamed up with a whole egg and a little sugar. The result is creamy, fruity and pleasantly spicy thanks to the grated nutmeg. A warming classic for cool evenings.

Instructions

  1. Add port wine, whole egg and sugar syrup to the shaker without ice.
  2. Dry shake for about 10 seconds.
  3. Add ice cubes and shake vigorously again.
  4. Double strain into a pre-chilled coupe.
  5. Sprinkle with freshly grated nutmeg and serve.

Garnish: freshly grated nutmeg

Pro tip: First dry shake without ice, then with ice - this makes the flip especially foamy and creamy.
