The Port Flip is a velvety dessert cocktail from the 19th century in which port wine is foamed up with a whole egg and a little sugar. The result is creamy, fruity and pleasantly spicy thanks to the grated nutmeg. A warming classic for cool evenings.
Instructions
- Add port wine, whole egg and sugar syrup to the shaker without ice.
- Dry shake for about 10 seconds.
- Add ice cubes and shake vigorously again.
- Double strain into a pre-chilled coupe.
- Sprinkle with freshly grated nutmeg and serve.
Garnish: freshly grated nutmeg
Pro tip: First dry shake without ice, then with ice - this makes the flip especially foamy and creamy.
