The Pirlo is the original spritz variant from the northern Italian city of Brescia. Still white wine is combined with Campari or Aperol and a splash of soda - regional, simple and the direct ancestor of the modern Aperol Spritz.
Instructions
- Fill a wine glass with ice cubes.
- Pour in the still white wine.
- Slowly add the Campari over the top so it sinks to the bottom.
- Top up with a little soda.
- Garnish with an orange slice and serve.
Garnish: Orange slice
Pro tip: In Brescia the Pirlo is traditionally made with local still wine - the drier, the more authentic.
