The Morning Glory Fizz is a whisky fizz with history: Scotch, a fine hint of absinthe and egg white make a zesty, slightly anise-tinged drink. Once celebrated as a hangover cure, today an elegant classic.
Instructions
- Add Scotch, lemon juice, simple syrup, absinthe and egg white to the shaker without ice.
- Dry shake for about 15 seconds until the egg white foams.
- Add ice cubes and shake hard again.
- Strain into a tall glass.
- Top up with cold soda water.
- Garnish with a lemon zest and serve.
Garnish: Lemon zest
Pro tip: The Morning Glory Fizz used to be considered a hangover cure - the absinthe only adds a fine hint of anise, so really dose it sparingly.
Frequently asked questions
What was the Morning Glory Fizz traditionally drunk for?
In the 19th century the drink was seen as an invigorating morning pick-me-up and supposed hangover cure, hence the name.
How much absinthe goes in?
Just two dashes - the absinthe should only contribute a subtle anise note, not dominate.
Can I use a different whisky?
Scotch is traditionally used, but a mild bourbon works too, though it shifts the flavor a bit sweeter.
