The Hemingway Daiquiri, also called Papa Doble, is the tart favorite variant of the famous writer from the bar El Floridita in Havana. Instead of sugar, grapefruit and maraschino bring a fine, dry fruitiness to the glass. An elegant, less sweet Daiquiri for purists.

Instructions

  1. Add the rum, grapefruit juice, lime juice and maraschino to the shaker.
  2. Add plenty of ice.
  3. Shake vigorously for about 12 seconds.
  4. Strain into a chilled coupette.
  5. Garnish with a lime slice and serve.

Pro tip: The Hemingway Daiquiri does without sugar syrup and is deliberately tart - if you prefer it a bit rounder, add a small bar spoon of sugar syrup.
