How to make a Caipirissima - the rum version of the Caipirinha with fresh lime, cane sugar and crushed ice. A simple Caribbean recipe to mix at home.
The Caipirissima is the Caribbean sister of the Brazilian Caipirinha: instead of cachaca, white rum goes into the glass, while the rest stays the same. Fresh lime, brown cane sugar and plenty of crushed ice make for a zesty, sweet summer drink. Easy to prepare and wonderfully refreshing.
Instructions
- Add the lime eighths with the cane sugar to the tumbler.
- Gently press with the muddler until juice comes out.
- Add the white rum.
- Fill the glass with crushed ice.
- Stir well and garnish with a lime wedge.

What sets the Caipirissima apart from the Caipirinha?
The Caipirinha is mixed with cachaca, a Brazilian sugarcane spirit. The Caipirissima replaces it with white rum but is otherwise built identically.
Which rum is suitable for the Caipirissima?
A light, white rum works best. It stays restrained in flavour and lets the freshness of lime and sugar come to the fore.
Can I also use dark rum?
With dark rum it is called a Caipirissima dorada. It becomes stronger and a little sweeter, because the aged rum brings more character of its own.
