Tequila Sour
How to make a Tequila Sour - the Mexican sour of tequila, lemon juice, sugar syrup and egg white. How to nail the creamy cocktail with a foam crown.
The Tequila Sour is the agave answer to the classic Whiskey Sour and proof that tequila can do far more than just shots. Fresh lemon juice, sugar syrup and an airy egg white crown tame the bold agave notes into a perfectly balanced drink with a creamy texture.

Frequently asked questions
What is the egg white for in a Tequila Sour?
The egg white provides a creamy texture and the typical firm foam crown. It does not come through in taste but only refines the mouthfeel.
What is a dry shake?
In a dry shake the ingredients are first shaken without ice. This lets the egg white foam up optimally before the drink is chilled down with ice.
Can I make the Tequila Sour without egg white?
Yes, then only the foam crown is missing. As a vegan alternative, aquafaba, the drained liquid from chickpeas, works excellently.
