How to make a Caribou - the warming Canadian winter drink of red wine and whisky, traditionally drunk at the Quebec Carnival. Served hot.

The Caribou is Quebec’s warming answer to the icy winter: a robust blend of red wine, port and whisky, rounded off with maple syrup. At the famous Carnaval de Quebec it is simply part of the tradition. Served hot, it drives away even the harshest cold.
Instructions
- Slowly warm red wine and port in a pot over medium heat.
- Add the maple syrup and the cinnamon stick and stir well.
- Stir in the Canadian whisky just before serving.
- Pour the hot Caribou into pre-warmed mugs.
- Garnish with a fresh cinnamon stick and serve warm.
