The Bee’s Knees was created during Prohibition, when poor-quality gin was masked in flavour with honey and lemon. Today it is an elegant, balanced classic in which the floral sweetness of the honey perfectly offsets the acidity of the lemon. A refreshing drink that brings out the best in the gin.

Instructions

  1. Add gin, lemon juice and honey syrup to the shaker.
  2. Add plenty of ice.
  3. Shake vigorously for about 12 seconds.
  4. Strain into a chilled coupe.
  5. Garnish with a lemon zest and serve.

Pro tip: Stir the honey beforehand with a little warm water into a liquid syrup (1:1 ratio), otherwise it clumps in the cold drink and won't blend in cleanly.
