The Aviation is an elegant gin cocktail from the era before Prohibition, its name a nod to the dawning age of flight. It owes its delicate sky-blue colour to the violet liqueur Creme de Violette. With maraschino and lemon, the result is a floral, fruity and finely balanced classic.

Instructions

  1. Add gin, lemon juice, maraschino and Creme de Violette to the shaker.
  2. Add plenty of ice.
  3. Shake vigorously for about 12 seconds.
  4. Strain into a chilled coupe.
  5. Garnish with a cocktail cherry and serve.
