The Sgroppino is Veneto’s lively answer to the classic dessert: lemon sorbet, Prosecco and a splash of vodka are whisked into a creamy, icy delight. Refreshing, sparkling and surprisingly light. Whether as an aperitif or a sweet end to a menu.

Instructions

  1. Put the lemon sorbet into a chilled bowl.
  2. Add the vodka and a splash of Prosecco.
  3. Whisk briefly with a whisk or hand blender until creamy.
  4. Fill the mixture into a chilled coupe.
  5. Carefully top up with the remaining Prosecco and garnish with mint.

Pro tip: Whisk the sorbet, vodka and some of the Prosecco briefly before adding the rest of the Prosecco - this way the consistency becomes nicely creamy.
