The Rum Collins is the Caribbean variation of the classic Tom Collins: white rum, fresh lemon, a little sugar syrup and sparkling soda. A light, crisp longdrink that refreshes instantly on hot days. Easy to mix and wonderfully thirst-quenching.

Instructions

  1. Add rum, lemon juice and sugar syrup to a shaker with ice.
  2. Shake hard for about 12 seconds.
  3. Strain into a highball glass filled with ice cubes.
  4. Top up with soda and stir briefly once.
  5. Garnish with a lemon slice and serve.

Pro tip: Add the soda only at the very end and stir gently just once, so the carbonation is preserved.
