The Pedro Collins is the Caribbean answer to the Tom Collins: white rum instead of gin, plus lemon, sugar syrup and sparkling soda. An uncomplicated, refreshing longdrink for hot days.

Instructions

  1. Add rum, lemon juice and sugar syrup to the shaker with ice.
  2. Shake for about 15 seconds.
  3. Strain into a Collins glass filled with ice cubes.
  4. Top up with cold soda water.
  5. Garnish with a lemon slice and cocktail cherry and serve.
