The Molokai Mike is an elaborate tiki cocktail from the Trader Vic school: a sour rum base crowned by a sweet brandy-orgeat layer. The two-color look makes it a real eye-catcher - and a complex experience in taste.

Instructions

  1. Shake light rum, lemon and orange juice hard with ice in the shaker.
  2. Fill a tiki mug with crushed ice.
  3. Strain the shaken mixture over the ice.
  4. Stir the brandy and orgeat together separately.
  5. Slowly float this mixture on top over a bar spoon.
  6. Garnish with an orange slice and cocktail cherry.
