The Juan Collins is the agave sister of the Tom Collins: tequila replaces the gin and gives the zesty sour highball a fresh note. With lime, sugar syrup and soda it is the ideal companion for warm summer evenings.

Instructions

  1. Shake tequila, lime juice and sugar syrup with ice in the shaker.
  2. Fill a highball glass with fresh ice cubes.
  3. Strain the shaken mix into the glass.
  4. Top up with cold soda water and stir briefly.
  5. Garnish with a lime wedge and serve.

Garnish: Lime wedge

Pro tip: Shake the tequila, lime and syrup over ice first and only then top up with soda - that way the carbonation stays in the glass longer.

Frequently asked questions

What is the difference from a Tom Collins?

The Juan Collins is made with tequila instead of gin - that is also where the Spanish first name Juan comes from.

How sweet is the Juan Collins?

Thanks to the sugar syrup it is pleasantly sweet and sour; the balance can be controlled well via the amount of syrup.

Which tequila works best?

A clear Tequila Blanco works best, as its fresh agave note harmonises well with lime and soda.
