The Jet Pilot is a classic tiki cocktail from the golden era of tropical drinks. Three rums, grapefruit, lime and a hint of absinthe make a multi-layered, powerful drink that brings the aroma of the South Seas into the glass.

Instructions

  1. Add all three rums to a shaker or blender.
  2. Add grapefruit juice, lime juice, falernum, cinnamon syrup and a dash of absinthe.
  3. Top up with crushed ice and flash-blend briefly or shake vigorously.
  4. Pour the entire contents unstrained into a tumbler.
  5. Top up with crushed ice if needed and garnish with a cinnamon stick.

Garnish: Cinnamon stick

Pro tip: The Jet Pilot is classically flash-blended briefly with crushed ice in a blender. The dash of absinthe is small but crucial for the typical aroma.
