The Hugo is the summer drink par excellence - light, floral and wonderfully refreshing. Invented in South Tyrol, it spread within a few years from the insider bar to every terrace. The elderflower syrup gives it its unmistakable floral note.

Instructions

  1. Add the mint leaves to a large wine glass and press lightly.
  2. Add the elderflower syrup and the lime wedges.
  3. Fill the glass with ice cubes.
  4. Top up with prosecco.
  5. Top off with a splash of soda and stir briefly.
  6. Garnish with a mint sprig and a lime slice.
