The Benton’s Old Fashioned is a modern classic from the New York bar PDT that gives bourbon a smoky, savoury depth through fat washing with bacon fat. Maple syrup replaces the classic sugar and underlines the spicy note. An advanced drink for adventurous connoisseurs.

Instructions

  1. Add the bacon-fat washed bourbon to a mixing glass.
  2. Add maple syrup and Angostura bitters.
  3. Fill up with ice cubes and stir cold for about 20 seconds.
  4. Strain into a tumbler filled with one large ice cube.
  5. Express an orange zest over the glass and drop it in.

Garnish: Orange zest

Pro tip: For the fat wash, stir warm bourbon with liquid bacon fat, let it infuse for several hours, and filter it off once the fat has solidified.
