The Agavoni is the Mexican answer to the Negroni: tequila replaces the gin and gives the bittersweet classic an agave-forward depth. As in the original, Campari and red vermouth create the perfect balance of bitterness and sweetness. A spicy aperitif that is stirred in seconds.

Instructions

  1. Fill a tumbler with ice cubes.
  2. Add tequila, Campari and red vermouth in equal parts to the glass.
  3. Stir cold with the bar spoon for about 20 seconds.
  4. Express an orange zest over the glass.
  5. Drop the zest in as a garnish and serve.

Garnish: Orange zest

Pro tip: A Tequila Reposado with subtle oak notes pairs especially well with the bitterness of the Campari - a Blanco feels fresher but sharper.

Frequently asked questions

What is the difference from the Negroni?

The Agavoni replaces the gin with tequila, which gives the drink an agave-forward, slightly earthy note.

Which tequila works best?

A Reposado brings depth, a Blanco emphasises the fresh agave note - both work well.

Is the Agavoni very bitter?

Thanks to the Campari it is distinctly bitter, but the red vermouth provides a pleasant sweetness to balance it out.
