The Illegal is a modern sour that combines the smoky spice of mezcal with white rum, lime and spiced falernum. The result is a deep, slightly tiki-leaning cocktail with surprisingly much character.
Instructions
- Add the mezcal, white rum, lime juice, falernum and sugar syrup to a shaker.
- Top up with plenty of ice cubes.
- Shake vigorously for about 12 seconds.
- Strain into a prechilled coupe.
- Garnish with a lime zest.
Garnish: Lime zest
Pro tip: Mezcal brings the smoky depth, the white rum softens it. Falernum adds almond and spice notes - without it the drink lacks its typical character.
Frequently asked questions
Why is the cocktail called Illegal?
The name alludes to the mezcal brand Ilegal Mezcal, around which the drink was originally built.
What is falernum?
Falernum is a sweet Caribbean syrup or liqueur with flavours of almond, lime, ginger and clove, often used in tiki drinks.
Can I replace the mezcal with tequila?
Yes, with tequila the drink becomes milder and loses the smoky note. For the typical character, though, mezcal is essential.
